Are you guys tired of overnight oats yet or are you ready for another go around this spring and summer? I am the latter camp, as you probably gathered from this recipe, and this is my new favourite combination. Black forest gateau is a classic treat for a reason and I’ve borrowed its delicious combination of chocolate and cherries for this simple, yet yummy, breakfast.
Oats are a staple at our house for breakfast and there are a few reasons. The first being that they’re one of the first breakfasts that we made on repeat when we had just gone vegan. Secondly they are very easy to make and you can vary them endlessly. Now with food prices soaring we really appreciate that they are very budget friendly on top of everything else.
Overnight oats is a great way to change things up after the long winter (at least here in Sweden) and many bowls of hot porridge. They are really great for meal prep too and this recipe is no different. So, feel free to make extra portions and enjoy fuss-free mornings with delicious chocolate-y oats in your bowl. It doesn’t really get much simpler than this, in the best way!

Black Forest Overnight Oats
Serves 4
INGREDIENTS:
2 cups rolled oats
4 tbsp milled flax seed
4 tbsp cocoa powder
2 cups soy milk, sweetened or unsweetened
To serve:
250 g frozen cherries, defrosted
Vegan greek style yogurt
Toasted walnuts or other nuts or seeds
METHOD:
Combine oats, milled flaxseeds, cocoa powder and salt in an air tight container. Mix well to combine. Pour over the soy milk and mix again until combined. Cover and set in the fridge over night or for at least 3-4 hours.
When you are ready to serve cut the cherries into smaller pieces, I like to use scissors for this as they are very juicy once defrosted.
Layer most of the cherries in the bottom of small bowls or glasses and top up with the chocolate flavoured overnight oats. You might want to give them a little stir before adding to the bowls or glasses.
Top with a dollop of thick vegan yogurt, the remaining cherries and something crunchy like toasted walnuts.
