It was some of you guys who wished for this video and I really appreciate your input, I hope it shows today. ✨ I do also want to say though that I'm also aware that for many this is the first time to have some true downtime in a long time and if you are spending this time putting in a lower gear I totally salute you. This video might not be for everyone. Rest is an important task all of its own! Maybe the most important. Instagram post 2276989773918505875_1450682456 I've slightly gone into hibernation since the end of last week and while I'm overflowing with ideas I'm also incredibly sleepy. Does spring make you guys feel sleepy? ✨ It's my favourite season but somehow it's like the sunshine both gives and takes energy. I'm sure the fact that there is a global health crisis going on isn't exactly helping either. How are you all feeling now that we have been facing this for a little while? I myself feel like it's a rollercoaster of emotions and a flurry of thoughts. Trying to focus on doing the things that being me joy though, chatting a lot to family and allowing myself to rest a bit more than usual. It helps me to stay more positive and calm through this. 😊 To let you know some fun news also I'll be posting two new videos this week! A recipe video is coming up tomorrow and on Saturday there will be more of a chat video with fun and hopefully helpful ideas of what to get up to at home now that most of us are spending so much more time there. I've really tried to listen to your requests of what you would like to see and am working on several more videos this week. Stay tuned and wishing you all well! 💛

A lot of you then shared the things you do to do the same, thank you! Today I thought I'd share a little more about what I do to lift my spirits when I'm dropping a bit low. You find said things I do these days to feel better within a challenging situation. We are social/physical distancing which in general is quite similar to working from home the way we always do so some of the things I share in the stories are things that always make me feel better in my daily life. They are simple and small things but make a big difference when we spend a lot of time at home and the world outside suddenly has gone wonky (or more wonky than usual). I just uploaded my first contribution to this category on my YouTube channel. A vegan goulash stew inspired by the flavours of Hungary. Maybe some of you guys didn't know but Rob's mama is actually of Hungarian descent 😊 This stew is hearty and instead of beef which it's traditionally made with I cooked mine with lentils. Lentils are so great in stews as they soak up liquid and flavor and make the whole dish have a lovely thick and luscious texture. I use smoked paprika powder and some red wine in mine which gives it a yummy depth of flavour. I hope you'll check it out and enjoy the video and maybe even try the recipe at home! Instagram post 2271337524664191957_1450682456 Caribbean inspired plate with rice and beans, jerk-ish chickpeas and garlic sauteed green beans and spinach ✨ I cooked this dish to try something new and stay in the moment as I was getting overwhelmed by all the news I was consuming in light of the Covid-19 crisis. My strategy since has been to limit my time interacting with news. I read some every day from a trusted source to stay updated and read an article here and there or watch a special on TV when I think it'll teach me something about the situation we're facing but other than that I don't look. It has really helped me to focus on daily tasks and my work, to try my best to stay in the now and simply give my attention to the task at hand. Like filming my last YouTube video where I cook the meal pictured. Since then I've cooked a lot and it always helps me feel grounded and connected. 🙏 What are you guys doing to cope with the current situation? Let's help and learn from each other 💛
Instagram post 2269852685674807943_1450682456 Wishing you all the best Saturday you could possibly have in these strange times and all sharing snippets from my new YouTube video in hopes to make it even better. ✨ The new video is a what I ate in a day cooking from my pantry and freezer. I thought it could be useful to show some ideas from my kitchen to yours using pantry staples as many of us are spending a lot of time at home and might not be popping to the shops as often as usual. There's breakfast corn fritters in there as well as trusty lentil bolognese and a delicious Caribbean inspired plate. I shared the recipes for how I made the sweetcorn fritters and the Caribbean inspired plate on my website as well in case you'd like to recreate the dishes. The lentil bolognese has been on my website for years and is a favourite at our house by now. I really hope this video brings you some entertainment and inspiration! 💛
