This is my nordic take on an acai bowl! Instead of the super berry that has taken the world by storm I use our very own Swedish super berry which is simply blueberries and mix it up with cooked beetroot and frozen banana. It has got that thick and luscious texture of an acai bowl, the same colour as an acai bowl and even a similar flavour but simply has ingredients that are more local to me here in the North of Europe.
I definitely have nothing against acai, I love acai bowls too, except I don’t like that the only way I can buy it here is in really expensive little plastic pouches. That’s what sparked the idea of me making this more local take. Also it’s great to celebrate the food that grow in our near environment of course. Especially during this time of the year when fruits and veggies are in abundance!

Black Forest Smoothie
Serves 1.
INGREDIENTS:
1,5 frozen banana
0,5 cup frozen blueberries
1 beetroot, cooked and peeled (65-75g)
1 tbsp peanut butter
0,5 cup oat milk
1 tbsp milled flaxseed
Top with:
Fresh berries
Granola
Seeds or Nuts
METHOD:
You can either make this thick smoothie in a high speed blender with a wand, which you can use to help the blending process, or in a food processor.
Make sure that your frozen banana is peeled and in smaller pieces. Add the banana along with the other ingredients into the blender jug or food processor bowl equipped with an s-blade.
Blend or process until smooth and creamy. Either use the wand and blend on a medium speed to begin with to help reach a smooth consistency without overheating the blender. Or if using a food processor you might need to stop a few times in the process to scrape down the bits off the sides using a spatula.
Serve in a bowl and top with your favourite toppings like this cinnamon granola, fresh berries and seeds or nuts.
