I might not have talked about this before but I am not a big fan of alcoholic beverages. While we’re making confessions I guess I should let you know that I also don’t like coffee. There I said it, haha! I’m not sure what kind of Swede I am but there you are. The fact that I don’t like the taste of real Pimms doesn’t mean I don’t want a fruity fresh drink like everyone else though so here we are with my kombucha pimms cup mocktail as I’m sure I’m not the only one.
Living in London I had many encounters with the predecessor to this non-alcoholic drink in the summers and I always loved how it looked. So vibrant and beautiful with fruits and cucumber floating among the ice. It looked so refreshing! So this is what I tried to recreate here. With kombucha, apple juice and fresh orange juice to replace the usual suspects.
The fruit I have used is pretty traditonal but feel free to switch it up. Why not try some apple cubes, blueberries and a couple of basil leaves some time? Also feel free to change the kombucha flavour if you’re feeling adventurous, it might taste a little less like the real thing (not that it tastes very much like it to begin with, although very tasty of course!) but it will be equally refreshing and fun to look at.

Kombucha Pimms Cup Mocktail
Makes 1 drink.
INGREDIENTS:
2-3 halfmoon slices of lemon
2-3 halfmoon slices of orange
1-2 mint sprigs
2-3 smaller strawberries
5-6 thin cucumber ribbons
2 tbsp fresh orange juice
1 dash of angostura bitters, optional
3 ice cubes
75 ml apple juice
100 ml ginger kombucha
METHOD:
Prepare the fruits and vegetables according to the description in the ingredients list and cut the strawberries into halves or quarters depending on their size.
Squeeze the fresh orange juice into a tumbler and if you wish add a splash of angostura bitters. These bitters do contain alcohol so if you strictly want this drink to be alcohol free leave them out.
Now arrange your fruits and vegetables as well as the ice cubes in the glass reserving a mint sprig for the top if you wish.
Pour in the apple juice followed by the kombucha and use a chopstick or similar to gently stir the drink.
Garnish with the remaining mint sprig and possibly a whole strawberry if you would like a more festive look.
