If you’re looking for a light and refreshing meal in the summer heat you’ve come the right place! If you’re looking for a nice party snack for your summer garden party you’ve also come to the right place. These kimchi lettuce cups are easy to make and very delicious, I really hope you all give them a go. I know I’ll be eating this all summer long!

I use gem lettuce for mine in this recipe but feel free to switch that up with any lettuce you have on hand that will keep it’s shape more or less well so that you can scoop it up in your hand and munch away. Also only fill them as much as you and/or your guests can hold in one hand as this is the preferred way of eating these of course.

When it comes to the kimchi make sure you choose a vegan version as some contain non-vegan ingredients and then you’re good to go!

Kimchi Lettuce Cups

Serves 4 as a snack or appetizer.


INGREDIENTS:

1 large avocado

0,25 lime, juice only

Salt, to taste

8 gem lettuce leaves

1 cup of vegan kimchi

0,25 / 60 g block of smoked tofu

3-4 radishes

0,25 cucumber

2 small spring onions

1 tbsp toasted sesame seeds
