WHAT I ATE IN A DAY + A SMALL GARDEN TOUR

Landed in Dubai a couple of days ago and was met by a wall of heat and humidity. The climate here is worlds apart from what we're used to in Sweden but I think it's doing wonders for my skin already so I'm happy to sweat a little more than usual. I guess my skin is enjoying the instant steam room when we're outside. I did face a little down side yesterday however when the internet wouldn't allow me to write this post so this what I ate in a day video has been up on youtube since yesterday. POLENTA PIZZA W/ TOFU ALMOND CHEESE AND GRILLED OYSTER MUSHROOM + COURGETTE

It's yet another day that Rob and I are getting ready to leave for Dubai. Tomorrow we are off again to do some work over there and will be away for little over a week this time. I'm a little sad to leave right now as the lilacs have just come into bloom, my favourite part of spring/early summer. If there's a time when I really like being in Sweden it's between May and September when spring turns into summer until summer turns lightly into autumn. Either way we are going and I'm packing and cleaning and photographing a recipe and the house is more or less in shambles. Last weekend Rob and I visited Mineral in Malmö. A quite newly opened vegan restaurant and wine bar. Aquafaba Chocolate Mousse (3 Ingredients)

I bought an electrical whisk last week about the same time my exhaust pipe dropped to the ground on a drive to the city. Those of you who follow along on my stories on instagram know what I am talking about. SPICED LENTIL SOUP W/ COCONUT MILK AND TOMATO

Yes I'm still making soups! I know it's May but so far spring has served us up an array of varying weather and the warm days are interspersed with very cool ones with icy wind. So, spiced lentil soup. To be honest I can eat soup in any climate and any season though and this spicy, coconut creamy, tomato-y lentil soup without any big chunks of veg feels like a spring evening kind of meal to me. I am enjoying the quiet and serenity of this more somber weather however and accepting that spring will arrive a little later than expected. It's been a while again! Especially since I posted a recipe so I'm excited to share these beetroot burgers with you today. I will from now on try to post once a week, either with recipes, guides or vlogs. I'm hoping this will allow me to produce more quality content. While you might not see my work as lacking in that department I often feel stressed to produce more than I've got stored. At other times it can be the other way around too but I'm hoping to also make more time for actualising myself and my work more in 'the real life'. Meaning in person where I get more face time with people. I'm looking into some courses at the moment and I'm planning to become a health coach or similar at some point in the near future.Read more

VEGAN IN DURBAN + VLOG

Hi Guys,

It's been a while! If you're a subscriber to my youtube channel you'll have been in touch more recently than here on the blog with this last vlog from Dubai, which I failed to upload here on the blog. Since then I've been to Durban, South Africa as well as Mauritius, then back to Dubai for a couple of days before finding myself here. Back at home in front of my laptop. Now you might think I'm chilling and finishing off lose ends that I'm back home but actually I hit the ground running with my father and his wife coming to stay over the weekend.
