It's January and as some of you might know that there's something called Veganuary happening. It's an initiative that supports people to try or make the transition to a vegan lifestyle every year in January. I think this is a fantastic initiative and I was thinking about how maybe I could join in and support it somehow in my own way. And happy new year to you all! I went a little quite as we transitioned from 2016 to 2017, I needed a little rest and I'm sure you understand. Now I'm back with enthusiasm however. I am starting a new series here on the blog which will be featured monthly as we go from month to month and things come in and out of season. BRUSSELS SPROUT SALAD W/ KALE, POMEGRANATE + SMOKEY ALMONDS

Here in Sweden we're one day before the day we celebrate, i.e. the 24th. That means it's a day of preparations and I thought it was a good day to post my final Christmas fueled recipe of this year. I've got a brussels sprout salad for you! I never grew up eating brussels sprouts as my mother doesn't like them but with Rob in my life I have been introduced to them in various ways. My favourite way of cooking them is to roaste them in halves making the outside crisp and inside tender. In this salad I incorporate kale which is another typical Christmas vegetable here in Sweden and I'm sure in many other places? I also toast some sweet and smokey almonds which go perfectly with the brussels sprouts and top it all off with some pomegranate kernels for a pop of colour and juicy sweetness.

They're all edible and fairly simple to make. Five different foods that will please different people or you could make them all and put together your own Christmas hamper to share with family and friends. THE GOOD + WILD YOGA SUPPER W/ RECIPES

APPLE AND PEAR OAT CRUMBLE W/ ROSEMARY

It's very early on this Wednesday morning as I'm writing this and I'm enjoying the moment when it's still dark outside which reminds me of childhood Christmas times. It was and still is the cosiest moments of the day. All the window lights, stars and traditional Christmas candelabra are lit. For me Christmas is all about the lights that brighten the dark. That and sweet treats. Haha. Whilst this apple and pear oat crumble is not really a traditional Christmas treat it's a perfect easy dessert to through together for your friends and family before it's time for the real Christmas bonanza.

It is a simple recipe using two of my favourite winter fruits; apples and pears. With the addition of rosemary and cinnamon it's elevated to a wintery sweet dream. For the crumble I use vegan butter. Something I don't use that often but for a more traditional textured crumble it's perfect. I don't keep it too traditional though as I like to add rolled oats to my crumble mixture. It makes the finished crumble chunkier and in need of a little more chewing which I like in contrast to the softened fruit.Read more
