It’s very early on this Wednesday morning as I’m writing this and I’m enjoying the moment when it’s still dark outside which reminds me of childhood Christmas times. It was and still is the cosiest moments of the day. All the window lights, stars and traditional Christmas candelabra are lit. For me Christmas is all about the lights that brighten the dark. That and sweet treats. Haha. Whilst this apple and pear oat crumble is not really a traditional Christmas treat it’s a perfect easy dessert to through together for your friends and family before it’s time for the real Christmas bonanza.
It is a simple recipe using two of my favourite winter fruits; apples and pears. With the addition of rosemary and cinnamon it’s elevated to a wintery sweet dream. For the crumble I use vegan butter. Something I don’t use that often but for a more traditional textured crumble it’s perfect. I don’t keep it too traditional though as I like to add rolled oats to my crumble mixture. It makes the finished crumble chunkier and in need of a little more chewing which I like in contrast to the softened fruit.
Like I already mentioned I realise you were probably expecting something a little more Christmassy coming from me at this point. I however have been in the sun working for a couple of weeks and am still waiting for a chance to create something suitably Christmas fueled for you. My hopes are that next week this blog and my youtube channel will turn into winter wonderland Christmas style so stay tuned and keep your eyes peeled. APPLE AND PEAR OAT CRUMBLE w/ ROSEMARY
YIELDS: 28 cm dish / TIME: 30 min
1 1/2 cup rolled oats
3/4 cup oat flour
1/3 cup coconut sugar + more for sprinkling
Pinch of salt
125 g vegan butter
3-4 sweet apples
2-3 pears
1 sprig rosemary, leaves finely chopped
1/2 tbsp cinnamon
Preheat your oven to 190 degrees celsius.
Combine all the dry ingredients for the crust in a mixing bowl before adding the butter broken up into small pieces. Use your hands to create a crumble out of the butter and the dry mixture. Set aside when the components are well incorporated.
Cut apples and pears into thin slices and place in a 28 cm oven dish or skillet. Sprinkle the chopped rosemary and cinnamon over them and mix before spreading the fruit out evenly across the pan. If you are using very ripe fruit you might also want to mix in some flour which will absorb excess liquid when baking.
Cover the fruit with your crumble and sprinkle some coconut over the top.
Bake in the middle of the oven for roughly 20-25 min or until the fruit is tender and the crumble golden.
Serve with vanilla cashew cream, vegan ice cream or your favourite vegan custard – I used Oatly’s here.
I made a rosemary crumble too some week ago (with pears and berries)! I think herbs are great in desserts ^_^
