This right here is a super easy recipe, which I've actually found most fermenting to be so far in my young experience. RAW CARROT AND BEET SALAD W/ SESAME DRESSING + A SIMPLE NOODLE BOWL

This past week was filled with a new adventure (and being a little nervous about this new adventure). On Tuesday I did ten hours of travelling to visit my an island a bit North of Stockholm where I have enrolled as a student. I've now officially embarked on a journey to become a dietary adviser and health coach along with roughly 30 other students. It's a  distance course with a few meetings spread across one year and so far it's been a bunch of fun. I had forgotten how wonderful it is to learn and how enriching it is to sit in a group of people with different life experience and hearing their thoughts on a subject.Read more


A SATURDAY W/ ME VLOG + FOOD INSPIRATION

Last Saturday Rob and I filmed a day out and about shopping at our local flea market and sourcing some local produce. For a little while I have been wanting to visit Mossagården her in the south of Sweden as I'd heard such good things about them. They run an organic veggie box scheme out of their farm in addition to having an on site store, summer cafe and annual farm festival with music and other fun stuff. Elenore over at earthsprout and Karoline of det gröna skafferiet (check them out!) had a workshop there during the festival this year that I sorely missed due to the lack of a ride. ROASTED APRICOT COMPOTE + YOGURT MUESLI PARFAIT

A couple of weeks ago Rob and I bought a punnet of apricots. Unfortunately the ones we got were rather on the dry side so I decided I should try to make them into something we actually want to eat. Flipping through a book I received from my mother for Christmas last year I saw some roasted apricots and thought: 'this is the answer to my questions'. This sounds a little dramatic and it really wasn't but it's more fun to write that way. Anyhow after roasting the apricots drizzled with a little brown rice syrup I finally decided to make them into a compote of sorts; roasted apricot compote to be more precise.Read more


CHANTERELLE SPAGHETTI W/ MISO + PARSLEY

Have you guys been to woods? Have you searched for those little nuggets of gold called chanterelles this late summer? Rob and I were lucky enough to inherit our friend Agata's chanterelle spot in the forest not far from where we live. And when I say lucky I mean lucky with a capital L because in Sweden people are not generous with their secret chanterelle spots. Like not at all. You can come with a Swede most places but not to their chanterelle spot. Luckily Agata hails from Poland originally and doesn't seem to have this trait. She's in general the most generous in sharing her knowledge about wild plants and herbs with us and we are her keen students.Read more


LATTE FUDGESICLES

It's still summer and I've got a treat for you; latte fudgesicles. It hasn't really been popsicle weather all summer here but fudgesicles feel slightly less freezing due to their rich nature and so they have become the perfect Swedish summer treat. These ones have gotten raving reviews from both Rob and my sister Flo so I'm hoping you'll like them too.

COURGETTE RIBBON SALAD W/ HERBS + NASTURTIUMS

Another Sunday and another recipe that I've got to share with you guys. But before that the weather report, since it's been a theme these last few posts, and I can let you know that rain seems to grace the lands wherever we go. At the moment we are back in my hometown visiting my mamma and pappa as well as lugging a bunch of wood stumps and branches out of my mamma's garden in addition to having our car looked at again by my pappa. It's all happening this weekend and following the manual labour carried out in the garden we are T to the IRED. It seems a fitting state to match the weather though so no complaints here.Read more

VEGAN TORTILLA SOUP

From a rather rainy Swedish summer I come at you with a new soup recipe. One that I've become rather obsessed with! Not just because it's ridiculously easy and quick but because it's one of those perfect summer soups. The vegan tortilla soup is clear and full of spices making it a fire-y summer evening warmer. Tofu Bánh mì w/ sriracha cashew mayo + quick pickled radish and carrot

I hope you're ready for a colourful taste sensation because here it comes in the form of a stuffed baguette. Inspired by Vietnam, which I must admit I've never been to, I'm bringing you my take on a bánh mì. Not just any bánh mì but a tofu bánh mì with a spicy cashew mayonnaise. To go with the smokey, salty, sweet marinated tofu and the sriracha mayo I made a take on the traditional bánh mì pickle and loaded the baguette up with all the yummy green things; lettuce, cucumber, coriander and of course spring onion.Read more
