You guys have enjoyed these vegan three course menu videos in the past so I thought it was about time to do another one in the name of fresh spring dining. This particular menu was also inspired by my mother as mother’s day is just around the corner. Don’t forget to spoil the mother’s and the mother’s to be, the ones who would love to become mother’s as well as those who’ve decided not to become mother’s or whomever you’ve got around you that you’d like to celebrate on this wonderful day all about motherhood.

On the menu for my mother’s day lunch I’ve got this elderflower and lime mocktail. I know, I know, not strictly a starter but a great way to start a get together and get the chat going. Followed by a whole braised cauliflower, on top of hummus, topped with pistachio dukkah served alongside a fresh shaved asparagus salad and bread. To finish I’m serving up some vegan blueberry cheesecake parfaits because who doesn’t like a lazy dessert that tastes great!? I hope this sounds yummy to you and I hope it can inspire many home cooked, celebratory, plant powered dinners this spring!
