
These lemon and poppy seed slices are the perfect afternoon snack when you crave something sweet yet refreshing. They also make a yummy dessert if you are looking for something easy to make and full of whole foods. The base for these slices are cashews, coconut and dates so they are pretty wholesome yet still has a nice sweetness to them.
Another tip is to bring these to your picnics this summer as a treat. Simply wrap them up in some paper or pack them up in a container and enjoy al fresco. If you want more picnic food tips check out this video where you can also see me make these slices. Enjoy!

Raw Lemon and Poppy Seed Slice
Makes 10
INGREDIENTS:
1 cup raw cashew nuts
0,5 cup desiccated coconut
Small pinch of salt
1 small lemon, zest and juice
0,75 cup pitted sticky dates, medjool or fresh from the fridge
1 tbsp cashew nut butter
2 tsp poppy seeds
METHOD:
Pulse cashews, coconut, salt and lemon zest into a fine gravel consistency in a food processor with an s-blade.
Add the lemon zest and juice, starting with half the lemon juice, Also add the dates and process on auto until almost completely combined.
Taste and adjust the lemon flavour by adding more lemon juice if you would like it more tarte. Also add in the poppy seeds and then process on auto until completely combined. The mixture should stick together like a ball in the processor when ready.
Line a bread tin so that there’s over hang on the long ends and press the mixture into the tin* using the back of a spoon or spatula. Then place the tin in the freezer for at least three hours or until you are ready to eat it.
Slice it into fingers or cut it into cubes and enjoy.
*You could also simply roll the mixture into balls if you prefer.

Malin, if I want to make these for a group of girls coming over, can I make them the day ahead? If so, how do I store them until we are ready to eat them? In the refrigerator or the freezer? Or out at room temperature?

Hi Deb,
These are best kept in the freezer in general but you can also pop them in the fridge for an hour or so before your friends come over to make sure they are not too cold when you eat them. They are good still cold or kept at room temperature for a little while before eating, the latter will make them more soft though and then they’re better eaten with a fork so your guests don’t get too sticky 🙂 Hope you have a lovely gathering!
