Summer has arrived and it’s time to enjoy lots of refreshing cool drinks on hot days. The best time is now! And it is the best time to make this blueberry and mint iced tea. The combo is cooling thanks to the mint and the blueberries bring a fun touch and great colour. And – it only takes about 10 minutes to make, at least if you use ice cubes to cool the tea down quickly.

Blueberry and Mint Iced Tea
Serves 4
INGREDIENTS:
750 + 250 ml water
2-3 tbsp sugar, depending on your preference
6 peppermint tea bags
150 g frozen blueberries
1 small lemon, sliced thinly
A handful of fresh mint sprigs
METHOD:
Boil 750 ml of water. Pour the boiling into a jug that takes at least 1 l of fluid along with the sugar. Stir to dissolve.
Steep the tea bags in the jug of hot water for at least 5-10 minutes.
In the meantime add the blueberries to a bottle or jar and use a utensil to smash them up a little.
Once the tea has steeped remove the teabags. Pour in the remaining 250 ml of cold water to start the cooling process. Then pour the contents of the jug into the bottle or jar to submerge the blueberries.
Leave in the fridge for 3-4 hours to cool or simply add ice to the bottle or jar to cool it more rapidly.
Add the lemon slices and fresh mint sprigs to the mixture just before serving and enjoy well chilled.
