
This ceviche inspired salad is a beautiful and vibrant explosion of colour that celebrates summer like no other salad. It’s tangy from lots of lime and super fresh with an array of summer vegetables. I make it in two layers, the first with courgette and the second a vibrant mix of vegetables and peach ceviche style meaning it is all immersed in a delicious mixture of lime, chili, coriander and salt. This combination of flavours brings so much life to this salad and for that I have to thank Peru! That is where ceviche originates from and where it serves a the national dish. Traditionally it’s made with white fish or other seafood and is made in many countries around South- and Latin America. This salad contains no living creature however and is full to the brim with colourful vegetables instead with a sweet touch from one of my favourite summer fruits. Enjoy!

Ceviche Inspired Summer Salad
Serves roughly 6.
INGREDIENTS:
Dressing:
1 jalapeno pepper, finely chopped
The juice from 3-4 limes and the zest from 1-2 of them, depending on the size
1 tbsp extra virgin olive oil
A good pinch of salt
For the salad:
2 courgettes, finely sliced
2 peaches or nectarines, finely diced
1 tomato or 6-8 cherry tomatoes, finely diced
2 inch piece cucumber, finely diced
1 avocado, finely diced
1 small red onion, finely chopped
A large handful coriander, finely chopped and extra whole leaves for decorating
METHOD:
Mix all your dressing ingredients well in a small bowl and set aside.
Slice your courgette finely either with a knife, cheese slicer or mandolin. Place in a bowl or container and pour half of the dressing over it. Mix well to coat all the slices. Cover and let rest in the fridge for 1-3 hours.
Chop the remaining vegetables and the peaches into small cubes and combine with the chopped coriander in a bowl. Pour the remaining dressing over the top and mix well. Cover and rest in the fridge for 1-3 hours.
Once rested spread your courgette slices out on a large serving dish. Dollop your peach and vegetable salad over the layer of courgette in a pattern that’s pleasing to your eye. Decorate with coriander leaves.
