Here comes another soup recipe to warm you as autumn slowly gives in to winter. It’s earthy and fresh all at ones utilising some gorgeous seasonal produce, at least here in the Northern hemisphere. Onion, leek, parsnip and apple make this soup sing and I hope you will enjoy it! Maybe you are thinking that apple in a soup sounds a little strange but you’ll just have to trust me on this one.

Roasted Parsnip, Butter Bean and Apple Soup

Serves 4-6.


INGREDIENTS:

500 g parsnip, peeled

2 small or 1 large apple

1 onion

0,5 of a large leek

4 large garlic cloves

1 tbsp rapeseed or olive oil

1 tsp dried rosemary

1 can of butter beans

1 stock cube

5-6 cups water

Salt and black pepper, to taste

Garnish with:

Vegan cooking cream

Fresh parsley
