A cosy condiment is what I’d like to call this. Perfect on top of porridge or in your morning parfait with vegan yogurt and granola or muesli. It is also yummy served warm in dessert the way I did in these Stewed Apple Crisp Pots. Cinnamon and vanilla makes it warming and you could blend it fully to make a sauceinstead of compote. This recipe is so delicious and so easy to make that I think that all that come across this recipe must try. What do you think, is that a deal?

Apple Compote
Makes a small jar.
INGREDIENTS:
8 small to medium sized apples
1 tsp cinnamon
0,25 tsp vanilla bean powder (or sub for vanilla extract)
A small splash of water
METHOD:
Core the apples and chop them into chunks, roughly half an inch wide. Transfer the cubed apple into a sauce pan and add the remaining ingredients. Add just a few tablespoons of water to the pot to get the cooking of the apples going without sticking. Cover with a lid and cook over low heat for roughly 15 minutes or until the apples are soft.
Once cooked use a stick blender to pure roughly half of the contents. You could also make apple sauce using this recipe and if so you will want to keep blending until completely smooth.
Pour the compote or sauce into a jar and let it cool. Keep refrigerated for up to a week.
