Happy new year all! Here comes a requested tutorial and recipe for quick pickled red onion. It’s a delicious condiments that goes with almost any savoury dish. It’ll lift any salad to new heights and bring some zing to your sandwiches. Enjoy! x
QUICK PICKLED RED ONION
Yields 1 x 500 ml jar.
INGREDIENTS:
1 cup apple cider vinegar
2 tsp sea salt
2 tsp maple syrup or other liquid sweetener
0,5 tsp black pepper corn
2 garlic cloves, sliced
3-4 medium onions, sliced into rings
METHOD:
Place everything except the onion into your jar and stir to dissolve salt and infuse flavours.
Then add your onion, as mush as will fit in a 500 ml air tight jar. Press it down and then seal the jar. Shake the jar vigorously.
Refrigerate and enjoy the next day and for several weeks ahead. Use the leftover vinegar for dressings and other sauces.

I’ve never tried making my own pickled onions but I would love to do your recipes however is it all right if I use the white onions. I know this is a bit too late but I just recently found you and you were such an inspiring vegan and I just really wanted to test out one of your recipes and I came across pickled onion‘s which I’ve tried before and I would love to make myself so yeah my only question is if can use yellow onions instead?

Loved these, I’ll definitely be making them again. They were a fantastic foil for the creamy red lentil and carrot dahl. I used a few pink peppercorns as well (because I had them, and they are cheery).
