
This is a breakfast recipe for everyone who loved oats but might be a little tired of their morning oat routine. These banana bread flavoured baked oats have a gentle sweetness to them and makes the whole house smell like banana bread.
The mixture itself seems wet as it comes together but once it’s baked it makes a lovely firm texture that is perfect for slicing and eating with a fork. The walnuts give it some crunch and the cinnamon is non-negotiable. I also like to add some shredded coconut to mine to give it a little bit more interest, it is something I usually add to my actual banana bread too.
Make it to share and enjoy it hot or make it as a meal prepping recipe ready to warm in the microwave in the morning for a quick, delicious and wholesome breakfast. Either way I hope you enjoy!

Banana Bread Baked Oatmeal
Serves 4-6
INGREDIENTS:
2 medium bananas
2 cups soy milk
2 tbsp maple syrup
2 cups oats
0,25 cup shredded coconut
2 tbsp milled flax seeds
1 tsp baking powder
1 tsp cinnamon
Pinch of salt
0,25 cup walnut pieces, optional
Serving suggestions:
Vegan vanilla yogurt
Banana slices
Mixed toasted seeds
METHOD:
Preheat the oven to 175 degrees C.
Line a rectangular oven safe dish with parchment paper and set aside.
Mash the bananas using a fork in a large mixing bowl. Add the soy milk and maple syrup and mix well using the same fork.
Add the dry ingredients except for the walnuts and mix again until very well combined. Make sure there are no dry spots.
Finally stir in the walnuts spreading them evenly into the batter.
Transfer the mixturew to the lined dish. Spread it out evenly. Bake in the centre of the oven for 30-35 minutes or until lightly golden on top and firm in consistency.
Remove from the oven and let cool for 5-10 minutes before slicing into 4 or 6 pieces.
Serve with whatever toppings you like. I like to pour over some vanilla flavoured vegan yogurt, slice some more fresh banana on top and finally sprinkle with some toasted seeds.
