
If you’re looking for a really quick, easy and full of flavour meal then this is the one for you! You can use a food processor, like me, or simply grab your stick blender to make the roasted pepper and sundried tomato pesto while you boil your pasta. Toss it together with some greens once it’s drained and you’ve got yourself a banging meal (if you ask me). Now that the days are getting longer and I spend more time outdoors these are the meals I like to make, the ones you don’t need to fuss over too much. What about you?

Red Pesto Pasta Salad
Serves 4.
INGREDIENTS:
For the pesto:
1 roasted red pepper from a jar
1 cup sundried tomato in oil
2 tbsp oil
0,5 cup walnuts
1 tbsp balsamic vinegar
1 tbsp soy sauce
2 tbsp nutritional yeast
A pinch of chilli flakes
Salt and black pepper, to taste
For the salad:
4 servings pasta, I used gluten free mafalda corta
4 tbsp pine nuts
20 cherry tomatoes
4 large handfuls rocket
METHOD:
Put a big pot of water on to boil for the pasta.
In the meantime combine all the pesto ingredients in a food processor with an s-blade. Pulse until you reach a slightly chunky pesto consistency. Set aside.
When the water is boiling salt the water and cook your pasta of choice until al dente or according to the package instructions.
Place a dry pan over medium heat. Once the pan is hot add your pine nuts and toast them until lightly golden. Keep shaking the pan so you don’t burn them. This will only take a couple of minutes. Once golden transfer to a small plate or bowl.
Slice the cherry tomatoes in half.
Once the pasta is cooked drain it. If you want the pasta salad to be cold rinse it in cold water. Either way transfer the pasta to a large mixing bowl and combine it with the pesto. Add the rocket and toss before serving on plates or bowls. Top with the sliced tomatoes and toasted pine nuts.
