If you’re looking for a really quick, easy and full of flavour meal then this is the one for you! You can use a food processor, like me, or simply grab your stick blender to make the roasted pepper and sundried tomato pesto while you boil your pasta. Toss it together with some greens once it’s drained and you’ve got yourself a banging meal (if you ask me). Now that the days are getting longer and I spend more time outdoors these are the meals I like to make, the ones you don’t need to fuss over too much. What about you?

I made this dish for my quick and easy at home lunches video on youtube along with this Vietnamese noodle salad and these spicy chickpea pita pockets. Hope you enjoy them all!
