Soup season has fully arrived and I thought we could celebrate with two of my current favourite autumn soups! I have been making the first soup featuring in this video on repeat for the most part of the last year and it’s a vegan take on a Tuscan bean soup. It is deliciously savoury and chunky with a tomato and vegetable broth base, chunky celery and carrots, kale and white beans. The other soup is a smooth and silky roasted pumpkin soup topped with some crispy fried breadcrumbs. Have you guys ever had fried breadcrumbs before it’s an ingenious (and delicious) way to use up stale bread. I spice the ones in this video with rosemary but any woody herb would be lovely.
