This salad is the perfect crunchy companion to most meals this summer. It might not be the most kid friendly but as a grown up I can vouch that this salad is super refreshing and full of flavour. I first had it at Rob’s brother’s wife’s mother’s house last summer. Sorry about probably just making you very confused, haha! I just loved the garlic dressing with the celery and olives and thought I must share it with you all. I hope you like it as much as I do!

Garlic Dressed Celery and Olive Salad
Serves roughly 6.
INGREDIENTS:
Dressing:
1 tbsp extra virgin olive oil
0,5 tbsp apple cider vinegar
1 garlic clove, minced
Salt and black pepper, to taste
Salad:
1 small head of celery, bottom removed
0,75 cup kalamata olives, halved
METHOD:
Mix all the dressing ingredients well and set aside.
Remove the bottom of the celery and clean the stalks well. Slice diagonally into bite sized pieces.
Mix celery, halved olives and dressing well and serve. Or better yet refrigerate for a couple of hours or over night before serving to allow the garlic to infuse the vegetables.
