In this video I make three delicious meals for four, each made in under 20 minutes. We can all use a few speedy meals in our arsenal and I’m hoping these will come in handy in your kitchen as much as they do in mine. Also! There’s no need to eat boring food simply because we’re pressed for time. All of these dishes are vibrant and flavourful as well as full of good nutrition from whole plant foods. Try the chickpea and spinach curry, tempeh tacos with crunchy slaw and avocado crema or the quick polenta with sauteed mushrooms, tofu and kale the next time you’re pinched for time.
