This is a great vegan staple to keep on hand for whenever you want to add a cheesy touch to your meals. It’s a whole food alternative to store bought vegan parmesan cheese with a nutty and cheesy flavour.
The brazil nuts add a delicious complexity to the mixture but you could also make this recipe using other nuts such as cashews or mixed nuts. The flavour of the nut you choose will of course carry through in the final product but I have tried this with several different types of nuts and it always turns out delicious.
It’s perfect on pasta, salads, avocado toast or anywhere else you want a savoury and cheesy extra.

Vegan Brazil Nut Parmesan
Makes 0,75 cups.
INGREDIENTS:
0,5 cup raw brazil nuts
0,25 cup nutritional yeast
1 tsp garlic powder
Salt, to taste
METHOD:
Combine all the ingredients in the small jug of a food processor. Pulse until you reach a crumbly texture and adjust the salt to taste. Store in an airtight container in the refrigerator.
Sprinkle over pasta, salads, avocado toast and anywhere else you want a cheesy touch.
