I roast these cauli steaks in the oven and then drizzle chimichurri all over them which makes them magic. You can see the whole process on youtube now and find the full recipe on my website. In the video you can also see me make the whole roasted cauliflower with turmeric yogurt sauce I posted the other day. I really hope make these steaks because they're so easy to make and so yummy! And this concludes my cauliflower craze that you've seen a testament of here this week. Cauliflower is over and out for this time. 🌿

✨ I decided to try something new with one of my favourite vegetables: cauliflower. ✨
It took me a couple of years to catch on to the trend and cook this whole roasted treat
but it was well worth the wait. I used Knorr's new vegan fond Rich Vegetable to baste it, a concentrated flavour bomb of a liquid stock. It added delicious depth and a touch
of umami which makes this cauliflower a great centrepiece on the table for a dinner
party with friends and family. At the same time it's certainly low maintenance enough to grace your week day menu too. I serve it with a vibrant turmeric yogurt sauce as
well as parsley, pomegranate jewels and toasted almonds to complement the fond's rich flavour and shake things up a bit. perfect for brightening up and adding oumph to your vegetable, grain and legume
dishes. I think it's fantastic how Knorr is making it easier for us to create flavoursome plant based dishes to share with the people we love. #knorrsverige #ad 🌿 Whole roasted umami cauliflower:
1 medium sized head of cauliflower
3 tbsp olive oil
3 tbsp Knorr Rich Vegetable fond ✨ Do this:
- Preheat your oven to 200 degrees celsius. Remove the large leaves from your
cauliflower and cut the stem off so it can sit flat on the surface. Use your knife to cut
an x into the remaining stem. Place your prepped cauliflower in an oven-proof dish
and coat it with 2 tbsp oil. Then add a couple of tbsp water to the bottom of the dish
and roast it in the middle of the oven for 45 minutes.
- Mix half of the fond with your remaining tbsp of olive oil and once the 45 minutes
are up take the cauliflower out of the oven and use a brush to coat it with the mixture.
Return to the oven for another 15 minutes. ✨ CONTINUES IN COMMENTS ✨

The first one is this deliciously creamy cauliflower soup that I typed with some fresh thyme and some spicy chili flakes. Scroll down for the recipe for this warming autumn hug in a bowl. So easy to make yet so satisfying as the days are getting chillier. 🌨️

🌿 Serves 6-8 people.
➖ 3 shallots, roughly chopped
➖ 4 large garlic cloves, roughly chopped
➖ 3 potatoes, chopped into cubes
➖ 1,5 large head of cauliflower, broken into florets
➖ Roughly 1,4 liters of water
➖ 2 tbsp bouillon paste or 2-3 stock cubes
➖ 1 tsp fresh or dried thyme
➖ 1 tsp fresh or dried rosemary
➖ 1 cup plant milk or plant cooking cream
➖ 1-2 tbsp lemon juice
➖ Salt and black pepper to taste
🌿 Do this:
➖ Saute shallots and garlic in some oil in a large pot for a few minutes until fragrant.
➖ Add remaining ingredients except for lemon juice to the pot and bring to a boil.
➖ Simmer for 15-20 minutes.
➖ Blitz with a stick blender until creamy Smith and season with lemon juice, salt and pepper until you reach yum.
🌿 Top with:
➖ A drizzle of plant cream
➖ Chili flakes
➖ Fresh thyme
🌿 Enjoy!

Lentils are having a bit of revival in my kitchen since the cold weather hit.
For these curried lentils I used beluga lentils. A small black little morsel that holds its shape well when cooked. Together with mushrooms, spices and vegan cream it makes the most delicious stew. It also works great in salads. Same as French puy lentils and green lentils as they also hold their shape well when cooked. Add some greens and some seasonal veggies and you've got yourself a meal. 🥦🥬🧅 But one of my favourite things to eat is dahl made with regular split red lentils. I'm sure many of you know this by now but there's just something so comforting about this dish. Like a warm blanket in the middle of winter but on the inside. 🙈 You can find the recipe for my version on my website if I've now convinced you to give it a try! 
All these lentils work well in chilis, bolognese and other soups and stews as well. So many opportunities held in such a small little package. And to top all the yummy things you can make with lentils did you  know that lentils are a great source of plant based protein as well as fiber and some minerals? ✨

After some silence from my corner I just uploaded a new video with five new recipes perfect to pack up and take to work or school. There's my favourite filling kale salad as pictured as well as a beet and carrot salad, curried lentils, the greenest soup and roasted pumpkin tacos. I post this recipe as one of the vegan dishes I know that your non-vegan friends and family will feel familiar with and enjoy as much as any vegan. Thought this series might be useful to many of you who are just starting to eat a vegan diet or for those of us who are trying to encourage our friends and family to try and embrace vegan dishes. Also it's just really good to eat a hearty soup this time of year and who doesn't like pasta in everything? 😉🍝 I sure do and hope you will enjoy the new recipe. Which is a continuing story which we hope will come to an end soon.
