Hi Guys,

I have made another ‘what I ate’ vlog that I want to share with you today. Last month I got a lot of good feedback after posting one a week for the whole month which is lovely, thank you for that! This week I made some lemon + matcha bites to go with it and i have included the recipe in this post if you simply scroll down.

The recipe is simple and quick but oh so yummy. Rob loves these kinds of snacks and these were actually inspired by one of his friends. A couple of years ago he visited from Canada and brought us some bars that he made and one of them was lemon and matcha flavoured. We loved it and have been making versions of it now and then since. I hope you’ll like it as much as we do and that you will enjoy the video.

LEMON AND MATCHA BITES


YIELDS: 12-14 balls  /  TIME: 15 min

1/3 cup cashew nuts
1/2 cup rolled oats
1/2 cup desiccated coconut
1/2 lemon, juice and zest
1 tsp matcha powder
1 cup sticky dates, such as medjool

Place the cashew nuts in a food processor and pulse until a chunky meal is formed.

Add the rolled oats and pulse a few more times until this is also a chunky meal and the two components have combined nicely.

Add the coconut, lemon juice and zest as well as matcha powder and pulse a couple of times to combine before adding the dates.

Process the ingredients until a semi-sticky ‘dough’ is formed and the mixture seems to stick together. Press the mixture between your fingers if you are uncertain; if it sticks together it’s done.

Roll the mixture into roughly 12-14 balls and enjoy. Or if you wish press the mixture out in a lined dish and refrigerate over night before cutting into your desired shape.

They will last refrigerated for roughly a week in an air tight container.
